Nick Stafford – General Manager

Nick is a pub enthusiast through and through. He has run very busy food pubs in recent years and before that ran the bars at an exclusive golf club in Sussex. Now fully enjoying Claygate village life and loving running the Hare and Hounds with the help of his loyal team. In time off he still plays a surprisingly high standard of squash giving the amount of research he also carries out on other local pubs and eateries with his girlfriend Sian and Branston the pub dog.

Veronique Loux – Deputy manager/Restaurant manager

Vero has been at the pub for 6 years and is the face of l'Auberge. Hailing from the South of France, Vero has experience in many top class restaurants including her own French restaurant in Ewell that she sold when she started her family. Vero is married to a chef so there is no fooling her in the kitchen either, 'mine host formidable' you will delight in Vero’s charming service and her enthusiasm for the pub

Sian Tegan – Assistant Manager

Sian started as a part timer after finishing her Equine Management Diploma and although is still in love with all things 'horsey' has also used her charm and sense of humour to delight our customers and rise the ranks to Assistant manager, a delightful bar maid and waitress and now a strong supervisor. Sian is the proud owner of an Irish sports horse called George.

Matt Clinton – Assistant Manager

A true 'Northern Lad', Matt is a great character behind the bar and very experienced for his years, having worked as a chef and barman all over the UK. Matt and Gemma are also a couple and live and work together in perfect harmony.

Gemma Weston – Assistant Manager

Hailing from the Gold Coast with experience in many bars and restaurants in Oz. Gemma has a British passport and is intending to stay in the UK with Matt and make their way in the trade as a couple. Gemma is a brilliant waitress and is the queen of great customer service.

Jissin Jonny – Head Chef

The calmest and most pleasant chef you could ever wish to work with, Jissin controls the kitchen and his team beautifully. Born in Southern India and holding a degree in hospitality he is a very experienced young chef having trained and worked in two French restaurants before taking up the reins here. You will delight in his food.

Rajkumar Kumble – Sous chef

Raj is of the same mould as Jissin, very quiet and calm, a talented chef with great things ahead of him. Your perfect sous chef, solid as a rock!

Gaby (Cantona) Boba

Gaby followed Jissin here as they are great friends and work together very well. He has just passed his chef qualifications and is a star of the future. Don't get caught into the trap of drinking Vodka with him though, many great drinkers have come a cropper!

Luis Pinto – Kitchen Porter/Commis Chef

Luis is our lovable KP trainee chef. Always keen to please he takes on the worst jobs with a smile and is a well known character in Claygate! You will learn to love him too...
